DOP is short for Denominazione di Origine Protetta—Italian for “Protected Designation of Origin.” It indicates that certain ingredients come from a specific region of Italy and meet strict quality standards.
When you see “DOP” on a pizza (or other Italian food), it typically refers to authentic, high-quality products like:

San Marzano tomatoes (DOP), grown in the volcanic soil near Mount Vesuvius.

Mozzarella di Bufala Campana (DOP) or Fior di Latte (DOP), cheeses produced in specific regions of Italy using traditional methods.

Parmigiano Reggiano (DOP) or Grana Padano (DOP), which must be aged and made according to exacting requirements.
Basically, if an ingredient is labeled DOP, you can trust it’s the real deal—genuine, top-quality, and tied to its unique geographic origin and tradition.

It took a couple of years but he finally did it and now we are sharing this Italian creation with you.
